What did they make Sauerkraut out of during World War 2, when everything was in short supply? CABBAGE! I have good memories of my parents and grandparents making sauerkraut when I was young. We shredded the cabbage into a large Redwing crock, and then stored it in the basement, where we could use it all winter long. It was a lot better than the Sauerkraut that you buy at the store in a tin can! There are also many uses for fresh cabbage, such as grandma's fresh cabbage salad with the crunchy noodles. Cabbage is easy to grow, and it can be extra rewarding to grow it in other colors, such as Golden Cabbage, and Red Cabbage.
