Vegetables - Bean Seeds
We have several broad categories of heirloom bean seeds to pick from, so it is good to be aware of the differences. Fava Beans produce giant pods and beans, and are in a class of their own. Then there are Lima Beans which are harvested green and usually shelled out of the pod to eat. We also have the classic Green Beans which can be stringless, and can have either a bush or pole growing habit. Yellow Beans are very similar to Green Beans, and provide a nice contrast in food. We also have several other varieties of open pollinated seeds that grow colorful beans like French Horticulture and Royal Burgundy. These beans are very easy to harvest and fun to eat. Finally, we have a lot of familiar Dry Beans like Kidney Bean, Navy Bean, etc that are generally allowed to dry down and then hulled out for use in soups and other tasty dishes.
