What did they make Sauerkraut out of during World War 2, when everything was in short supply? CABBAGE! I have good memories of my parents and grandparents making sauerkraut when I was young. We shredded the cabbage into a large Redwing crock, and then stored it in the basement, where we could use it all winter long. It was a lot better than the Sauerkraut that you buy at the store in a tin can! There are also many uses for fresh cabbage, such as grandma's fresh cabbage salad with the crunchy noodles.
